I think this a question to ask someone individually who actually goes by pronouns like this when you come across them. It'll come off as you trying to be respectful of and understand their identify. Plus, you'd get better responses on their exact preferences on how they present and what they want others to refer to them as.

let me explain as best as i can (i suck at explaining)
if someone uses it/its, instead of saying "he ate the pizza" or "he did the work himself", you would say "It ate the Pizza" and "it did the work itself

for things like neopronouns (like star/starself)
you would say "star ate the pizza" and "star did the work starself" or, if they dont use self at the end of their neopronoun, it'd be "star did the work star"

also, if someone identifies as non-human, they feel as if being a human doesnt fit how they see themself.

now, to answer the four main questions,
1: you would change what pronoun you use for them (like, instead of she, you'd use their chosen pronoun)
2: if they identify as nonhuman, you can call them a thing (only if they say its okay), or you can ask what to call them in situations where you would need to call them a human or a person
3: things like star/starself are neopronouns!
4: i actually cant answer this one. I'm not a nonhuman.

also, for the "can i say you and they/them as default pronouns?" question, YES. you CAN.

a lot of the time, ppl think they have past lifes of these things! they may use neopronouns, which are kinda hard to use sometimes, but looking at tutorials helps , they are LOTS of different identity types and genders! MOST of the time, you can still call them a person because they know they are still human, sorry im not the best at explaining shit [._.]
